Ingredients:

  • 2 Tablespoons unsalted butter
  • 1 small onion, grated
  • 3 celery stalks, minced
  • 1 Tablespoon all-purpose flour
  • Salt and white pepper to taste
  • 1/4 teaspoon ground mace
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Tabasco
  • Lemon juice
  • 2 cups heavy cream
  • 2 cups milk
  • 1 pound Jumbo Lump or Dungeness Crabmeat
  • 1/2 cup sherry wine
  • .Paprika
  • Chopped fresh parsley

Preparation:

  1. Melt the butter in a large skillet over medium heat and saute the onion and celery until soft.
  2. Sprinkle the flour over the vegetables, stir, and cook 5 minutes.
  3. Add salt, pepper, mace, thyme, Worcestershire sauce, Tabasco, and a splash of lemon juice.
  4. Simmer briefly.
  5. Add the cream and milk and heat almost to scalding, stirring constantly.
  6. Add the Jumbo Lump or Dungeness Crabmeat and stir.
  7. Heat just long enough to warm through.
  8. Add the sherry wine and serve at once, garnished with paprika and chopped parsley.

Ingredients:

  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup sweet pickle relish
  • 2 tbsp. chopped black olives
  • 1 small white onion, peeled and minced
  • Salt and freshly ground black pepper
  • 1 head iceberg lettuce
  • Meat from 2 cooked 1.5 to 2-lb. Dungeness crabs
  • (or 1 pound cooked lump Dungeness crabmeat-Available from Farm 2 Market)

Preparation:

  1. Mix together mayonnaise, ketchup, pickle relish, olives, and onions in a small bowl. Season with salt and pepper to taste. Refrigerate dressing until ready to use.
  2. Core, wash, and dry lettuce, then slice into shreds. Place in a bowl and toss with 1 cup dressing. Divide lettuce between 4 plates, place 1 cup crabmeat over lettuce on each plate, and spoon a bit of remaining dressing over crabmeat. Adjust seasoning if necessary. Serve with lemon wedges and Tabasco sauce if desired.
