FARM 2 MARKET is proud to offer a recipe for Mussels and Clams courtesy of esteemed author and cooking teacher of Italian regional cuisine, Ms. Anna Teresa Callen.
A native Italian, Senora Callen is the author of numerous cookbooks, her latest Memories of Abruzzo chosen among the 10 best cookbooks of 1999 by Newsday. She has appeared on David Letterman and is a consultant to leading Italian restaurants nationwide. Her work as a food writer has appeared in many publications including Bon Apetit and Food & Wine.
Quote: This recipe is probably the result of one of the outrageous suggestions made by my Father, or Uncle Raf, after one of our mussel harvests on the Adriatic coast. They not only had an adventurous palate, but also a penchant for a good drink. I am sure they were having a glass of beer when they came up with this idea. An excellent idea.
Cozze e Vongole alla Birra (Mussels and Clams with Beer) (Serves 4)

tablespoons extra virgin olive oil |

onions, chopped fine |
| 4 |
garlic cloves, minced |
| 6 |
sprigs of parsley |
| 2 |
cups of beer |
| 2 |
pounds of clams |
| 2 |
pounds of mussels |

In a large skillet heat the oil; add the onion, garlic and 2 sprigs of the parsley. Cook stirring for 5 minutes. Add the beer, bring to a boil then add the clams, cover and cook 3 minutes. Add the mussels, cover and cook 5 to 8 minutes until the mussels and clams are all open. Shake the pan often while cooking. Discard unopened shellfish. |

Mince the remaining parsley and sprinkle it on the mussels and clams just before serving. |
