New England Lobster (Serves 4)
Most lobster lovers agree that the best and easiest way to cook live lobsters is by boiling them. Gauge the amount of water you will need to cover the number of lobsters to be cooked. Add one tablespoon salt for each lobster. Cover the pot and bring it to a rolling boil before dropping each crustacean in headfirst. Allow 10 minutes of cooking time for a 1 pound lobster (add 2 minutes for each 1/4 pound). Timing should begin when the water returns to a boil.

Boil the lobsters according to above instructions and remove to cutting board and place it on its back.

When cooled slightly, using a large, sharp knife and a hammer or mallet, split it in half from end to end starting at the head. Crack the claws with a mallet so the meat can be easily extracted at the table.
