Ingredients:

  • 1 1/4 stick butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 small bell pepper, diced
  • 1 lb peeled crawfish tails
  • Flat leaf parsley, chopped
  • Scallions, chopped
  • ½ t salt
  • ½ t cayenne pepper
  • ¼ t oregano
  • ¼ t paprika
  • ½ t black pepper
  • ¼ t white pepper

Preparation:

  1. Melt butter or margarine.
  2. Add diced onions, celery, and bell pepper.
  3. Saute' on medium heat until vegetables are translucent . Approximately 15 minutes.
  4. Add crawfish and seasonings - stir well.
  5. Cook covered on low heat for approximately 15 minutes.
  6. Add chopped parsley and green onions just before serving.
