Ingredients:

  • 3 T olive oil
  • 1 large onion
  • 1/4 cup green onion
  • 2 cloves garlic
  • 1/2 cup chopped green bell pepper
  • 2 stalks celery
  • 2 c sliced mushrooms
  • 1 stick butter
  • 3 T unbleached flour
  • 1 c heavy cream
  • 1 teaspoon tomato sauce
  • 1 lb. crawfish
  • 1/4 cup fresh parsley
  • 1/2 cup unseasoned breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg
  • 1 cup milk
  • 2 pie crusts...store bought is fine

Preparation:

  1. Heat oil in medium size soup pot or dutch oven.
  2. Saute onion, garlic, bell peppers, celery, mushrooms.
  3. Melt butter.
  4. Add flour and cook for three minutes.
  5. Pour in cream and tomato sauce and cook for ten minutes.
  6. Add crawfish tail meat, and parsley, cook for 10 minutes
  7. Turn off heat and let set 10 minutes.
  8. Add bread crumbs ,salt ,pepper, egg, and milk. Mix well.
  9. Place inside pie shells and bake 35-40 minutes on 350 degrees.
