Ingredients:

2 pounds Tuna Loin
1 T garlic
1 T chopped parsley, chopped
1 T tarragon, chopped (optional)
2 oz olive oil
Salt & Pepper

Piperade Sauce :

  • 2 oz olive oil
  • 1 T. garlic chopped
  • 1 sliced onion
  • 2 tomatoes, chopped
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 C. white wine
  • 30 olives pitted and chopped
  • 1 T chopped parsley
  • 1 t thyme
  • 1 t oregano
  • Salt & Pepper

Preparation:

  1. Cut 6 5-oz Tuna steaks.
  2. Marinated with garlic herbs and oil.
  3. For the sauce heat a medium sized heavy pot, add oil, garlic, onion, tomatoes, peppers and cook.
  4. Add white wine and simmer.
  5. Add herbs, olives and salt and pepper. Hold sauce hot.
  6. Season the Tuna with salt and pepper and grill over high heat for 2 minutes on each side.
  7. Spoon Piperade Sauce over Tuna.
  8. Serve with Rice and your choice of simple vegetable
